Home style preparation of cauliflower and potatoes with fresh tomatoes and onion during winters is the staple of North Indian kitchens. Ginger and coriander are added to spike up the flavors.

SERVES – 6
INGREDIENTS

Cooking oil-1/2 cup, Cumin-1tsp, Asafoetida-1tsp, Onion grated– 200gms, Garlic-1.5tbsp, Tomatoes grated – 400gms, Potatoes diced -1kg, Cauliflower florets-500gms, Turmeric pwd-1.5tsp, Coriander pwd – 3tsp, Red chilli pwd -1tsp, salt-to taste

FINISHING
*Kasuri methi – 2tsp
*Chopped corriader-1/2cup
*Ginger juliennes-10gms
*Ghee amul-2tbsp

METHOD:
1-Take oil in a deep pot. Once oil is hot add cumin seeds, asafoetida and lower the flame.
2-Add onions and sauté stirring frequently. When the onions are about to caramelize add garlic paste and cook.
3-When the raw smell from garlic is gone add the grated tomatoes. Keep cooking the tomatoes till the water evaporates.
4- Add the potatoes and mix with the masala. Cover with a lid and cook.
5-When the potatoes are half cooked add the cauliflower florets.
6- Sprinkle turmeric pdr, coriander pdr and red chilli pdr and salt.
7-Little water can be sprinkled to avoid the vegetables sticking to the pot. Cover the pot and cook on slow flame.
8-Mix gently the vegetables avoiding any breakage.
8-When the potatoes and cauliflower are cooked finish the dish with Kasuri methi, coriander, ginger and ghee.
