Stir-fry okra with onion dices.
SERVES – 6
INGREDIENTS
Cooking oil- .5 cup, Cumin seeds-1tsp, Garlic-2tbsp, Onion Chopped-200gms, Tomatoes-350gms, Turmeric pwd-1.5tsp, Chilli pwd-1tsp, Coriander pwd-2tsp, Okra-1kg, Diced onions-250gms, Coriander chopped-1/2 cup, Ginger juliennes-1tsp
METHOD:
1-Wash the okra let it dry and then cut into medium roundels and set it aside.
2-In a hot pan take oil, and then add cumin .When cumin starts to pop add chopped garlic.
3-Add the onions and sauté till it becomes golden brown. Add the tomatoes and keep stirring till the tomatoes are cooked.
4- Add chilli pdr, coriander pdr, and turmeric pdr. Cook till oil separates from the masala.
5-To the masala add the okra and mix well. Sprinkle little water to avoid sticking of the vegetable .Season with salt, cover with a lid and cook on slow flame.
6- Ensure that the okra is not over cooked or mushy.
7-When almost cooked add the diced onions and cover one more time.
8-Finish the dish with coriander and ginger.
