ERAL SUTTUDHU– GRILLED SHRIMPS IN SOUTH INDIAN SPICED MARINADE
SERVES – 4
INGREDIENTS
Curry leaves finely chopped – 5 tbsp, Chopped garlic – 5 tbsp, Corriander pwd – 5 tsp, South Indian, Garam masala – 3tsp, Kashmiri chilli pwd – 5tsp, Turmeric pwd – 3 tsp, Crushed peppercorns – 3 tsp, Crushed fennel seeds – 5tsp, Salt – 3 tsp, Cooking oil – 1.5 cup, Vinegar – 1.5 cup, Shrimps (clean medium size) – 500 gms
METHOD:
1-Add curry leaves along with all the spices in a mixing bowl. Mix all the ingredients together rubbing them together. Allow them to rest for an hour.
2-Add vinegar & cooking oil to the above spice mixture, whisk them to incorporate all the Ingredients.
Allow the marinade to rest for 4 hrs.
3-Apply the marinade on shrimps, skewer them & pan grill them.
4-Brush the shrimps with the marinade in between. Season the shrimps with chopped coriander & lemon juice before serving.
