Spring chicken cooked in a mild sauce of onion and tomatoes flavored with fresh coriander and ginger.

SERVES – 6

INGREDIENTS

Cooking oil -1/2 cup, Green Cardamom-5 no’s, Cloves-5nos, Cinnamon stick-1 no’s, Cumin seeds-1/2tsp, Chopped Garlic -1tsp, onion grated – 200gms, Tomato grated – 400gms, Coriander pwd – 1.5tsp, Turmeric – 1/2tsp, Chilli pwd-1/2 tsp, Chicken – 400gms, Potatoes diced – 150 Gms, lemon juice-15ml, Salt-to taste, Chopped coriander – ½ cup, Chopped Ginger-1bsp, Ghee Amul-2tbsp

Method:

1-Heat oil in a cooking pot add green cardamom, clove, cinnamon & cumin seeds. Allow them to splutter.

2-Add chopped garlic to the above spices, sauté till crisp. Add grated onion to the garlic & cook till thick in consistency.

3-Add grated tomatoes along with coriander pwd, turmeric pwd& chilli pwd to the above onions. Cook the masala well till oil comes on the sides.

4-Add chicken along with diced potatoes to masala & sauté them gently, add salt & water. Allow the curry to boil than simmer on slow flame.

5-Adjust the seasoning with lemon if required & finish the curry with chopped ginger, coriander & ghee.
