Kadhai chicken is a relatively dry preparation with sweet peppers and onions. Home blended Kadhai masala is added to elevate the overall flavor profile of the dish.

INGREDIENTS
Oil-1cup, Kadhai masala-1tsp, Onion Grated – 200 Gms, Garlic-1tbsp, Tomato grated -600gms, Chilli paste – 1tsp, Red chilli pwd-1tsp, Turmeric-1tsp, coriander pwd-4tsp, chicken-400 Gms, Sugar-1tsp, salt-1tsp, Capsicum red (1’’ dices)-1no, Capsicum yellow (1’’ dices)-1no, Capsicum green (1’’ dices)-1no, Onion (1’’ dices) -1no
Finishing
Chopped coriander leaves – ½ cup, ginger juliennes -20 Gms, Kasuri methi – 2 tsp, Ghee amul- 2tbsp
METHOD:
1-In a thick bottomed pot take oil. When oil gets hot add the Kadhai masala.
2-Add grated onions and cook, stirring continuously. Add garlic when the onion has caramelized.
3-Keep stirring and add grated tomatoes. Cook further till the tomatoes are nice and mushy.
4-Add Chilli paste, chilli pdr, turmeric pdr & coriander pdr and mix well.
5-Little water can be added to avoid the masalas from sticking to the pot.
6- Add the chicken and mix with the masala. Season with salt and sugar.
7-Reduce the flame and cook. Add little water at this stage.
8- When the chicken is nearly done add the peppers and onion dices.
9-Finish the dish with chopped coriander, ginger julienne, kasoori methi and ghee.
