Tandoori Garam Masala - I

Ingredients:
Bayleaves-15gms
Blackpeppercorn-70gms
Cinnamon sticks-30gms
Fennel seeds-30gms
Cumin seeds-40gms
Royal cumin-20gms
Green cardamom-60gms
Black cardamom-20gms
Corriander seeds-50gms
Mace-10gms
Khuskee jad-8gms
Rose petals-15gms
Cloves-30gms
Patharke phool-8gms
Red chilli deseeded -20gms
Star anise-10gms

Kasuri Salt

Ingredients: Malden sea salt-100 gms, Garam Masala pwd-5gms, Toasted cumin seeds-10gms, Dry Fenugreek leaves-5gms

Punch phoran

Ingredients: Mustard seeds-30gms, Cumin seeds-30, Fennel seeds-30, Onion seeds-15gms, Fenugreek seeds -5gms

Kadhai Masala

Ingredients: Coriander seeds - 100gms, Cardamom - 15gms, Cloves - 15gms, Dry Red Chillies-10nos

Tandoori Garam Masala – II

Ingredients:
Coriander seeds -2 cups
Cumin seeds -1 cup
Pepper corns -1/2 cup
Green cardamom – ¼ cup
Cloves – 2 tbsp
Mace – 1tbsp
Cinnamon sticks 1’’ stick – 4nos
Bay leaf – 4 to 5 no’s
Dry red chilly whole deseeded– 6 to 8 no’s
Method :
1- Mix all the spices in a tray keep them in a warm place or under sunlight for a day.
2- Grind all the spices in a spice grinder. Strain them through a fine sieve.
3- Store the spice mix in an airtight container in cool place, preferable away from light.

Biryani Masala

Ingredients: Green cardamom -1 kg , Mace -100gm

Method:
1- Mix all the spices in a tray keep them in a warm place or under the sunlight for a day.
2- Grind all the spices in a spice grinder strain them through a fine sieve.
3- Store the spice mix in an airtight container in a cool place, preferable away from light.

Raita Masala

Ingredients: Cumin seeds-100gms, Peppercorns-25gms, Cinnamon-5gms, Cardamom-3gms, Cloves-3gms

South Indian Garam Masala

Ingredients:
Corriander seeds-300gms
Star anise-20gms
Peppercorn-100gms
Clove-20gms
Green cardamom-10gms
Fennel seeds-100gms, Cumin seeds-50gms
Redchillies-15gms, Cinnamon sticks-15gms
Curry leaves-5gms, Bay leaf-2gms
Mace-10gms, Methi seeds-5gms
Method :

2- Grind all the spices in a spice grinder strain them through a fine sieve.
3- Store the spice mix in an airtight container in a cool place, preferable away from light.

Tawa Spice Mix

Ingredients: Coriander seeds – 2cups, Roasted Cumin seed – ½ cup, Fennel seeds – ¼ cup, Dry pomegranate seeds – ¼ cup, Dry red chilly whole seeds less – 3-4 no’s, Asafetida – ¼ cup,
Dry fenugreek leaves – 2 tbsp, Onion seeds – 1 tbsp, Turmeric powder – 2 tbsp, Kashmiri chili powder – 2 tbsp
Method:
1- Grind all the whole spices to fine powder except the onion seeds. Grind the onion seeds to a coarse powder.
2- Add all the spices in a mixing bowl and mix.
3- Store the spice mix in an airtight container at cool place, preferable away from light.
