Tamilian Style Grilled fish in Banana leaf.

SERVES – 4
INGREDIENTS
Sea bass fillet – 4 no’s (75 Gms each), Lemon – 1 no, Turmeric – 1 tsp, Cumin seeds – 1 tsp, Black peppercorns – 1 tsp, Fresh ginger – 50 Gms, Garlic – 4 Cloves, Coriander leaves -2 cups, Curry leaves – 2 sprigs
, Green chili – ½ no, Banana leaves (whole) – 4 nos

Method:
1-Wash the fillets under running water, pat dry with a kitchen towel.
2-Season the fish fillets with lemon juice and turmeric, allow it to rest for 5-10 mins.
3-Grind peppercorns, cumin, garlic, ginger, coriander, and curry leaves to a coarse paste. Season with lemon juice and salt.
4-Rub the seasoned paste on the fish fillets, wrap them in pliable banana leaves. Allow the fish parcels to rest for 15-20 mints in the refrigerator.
5-Heat 2 tbsp. of oil in a griddle. Place the fish parcels, seam side down, and allow to cook 5 mins on each side, turning the parcel once. Check for doneness by piercing the fish with a tip of a Knife.
6-Serve sutta has been accompanied by Lemon wedge.
